Prickly customer & girl = Holly, upset = blue.

Just before leaving Guy's clue, wasn’t the clue that “causes rational girl” is an anagram of celastrina argiolus? “Upset” usually means an anagram in crossword compiler-speak? So the “upset” meant an anagram rather than “blue”?

Yes - the question passes (or has already passed :D ) to Xmilehigh, but Roger is absolutely right.
'Prickly customer...' = holly blue (customer of a prickly thing, i.e., holly),
'... causes rational girl...' is indeed an anagram of Celastrina argiolus,
'... to be upset' is the anagram indicator.

It's yours by rights, though, XMH

Good answer - I never thought of that! Unfortunately, this isn't the answer I'm looking for :?

There is a connection between each species and some characteristic that is not to do with the spelling of either their vernacular or scientific names.

I think the answer is four. Each butterfly is represented by the number of British subspecies it has. Graying has 6 and Scotch argus has 2.
